| Business briefs: Lincolnwood Town Center welcomes new retailers Posted: 26 Aug 2010 03:01 AM PDT August 26, 2010 Several new stores are opening at Lincolnwood Town Center. Lifestyle retail icon Spencer's newest store opened Wednesday. The Diamond Exchange will open in the mall in September, and the Art of Health opened earlier this month. Spencer's, one of the oldest and best-known lifestyle retail chains, was founded in 1947 and currently operates more than 600 mall-based stores throughout the United States and Canada. Spencer's targets consumers age 18-24 and specializes in unique and innovative products, including apparel, lifestyle accessories and decor. "We're very excited to bring our entertaining store concept to the Lincolnwood Town Center," said Steven Silverstein, president and CEO of Spencer's. "This new location features our award-winning store design that's a breakthrough concept among mall retailers." Spencer's newest location occupies a 2,320-square-foot space on the upper level in the Carson Pirie Scott wing. The space most recently hosted a temporary tenant, Lucky Gifts, which has moved to the lower level of the mall. In addition to Spencer's, Lincolnwood Town Center recently welcomed the Art of Health, specializing in massage and acupuncture therapy, on the upper level in the Kohl's wing. Diamond Exchange, a jewelry store, will also open a store on the upper level center court this September. Celebrity chef set for Skokie visit Celebrity chef Rick Bayless will perform a live cooking demonstration and sign books at 2 p.m. Saturday inside a "culinary tent" near Macy's at Westfield Old Orchard. Bayless will prepare food from recipes that those in attendance will be able to sample. Directly following the demonstration, Bayless will be inside Macy's to sign his new cookbook, "Fiesta at Rick's," for anyone who purchases it. Bayless was awarded 1995 Chef of the Year honors by the International Association of Culinary Professionals, the 1998 Humanitarian of the Year award by the James Beard Foundation and the 2002 Cooking Teacher of the Year Award by Bon Apetit. In 2007, Frontera Grill, one of which is located at Old Orchard, was named America's Outstanding Restaurant of the Year by the James Beard Foundation. In addition to Frontera Grill, Bayless owns Chicago restaurants Topolobambo and XOCO. Bayless hosts the TV show "Mexico -- One Plate at a Time" on public television, now in its seventh season.
